Tasty Tailgating Chili {Recipe}

- ½ Tbs olive oil
- 1 onion, chopped
- 1 bell pepper, cut into ½' cubes
- 2 cloves garlic, chopped
- 1 lb ground meat
- 3 oz tomato paste
- 2 Tbs chili powder
- 2 tsp cumin
- 1 tsp salt
- ¼ tsp pepper
- 1 - 2 tsp Cajun Seasoning *optional
- 1 bottle lager (12oz beer)
- 1 can of kidney beans (19oz)
- 1 can of diced tomatos (12oz)
- Heat olive oil in a large pot over medium high heat. Add the onions, bell peppers, and garlic.
- Cook while stirring occasionally, until soft, about 6 to 8 minutes.
- Add the beef and cook, breaking up with a spoon, until no longer pink, about 5 to 7 minutes.
- Add the tomato paste, chili powder, cumin, and additional spices if used and cook, stirring for about 2 minutes.
- Add the beer, beans, the tomatoes and their juices, 1 tsp salt and ¼ tsp pepper.
- Simmer over medium heat, stirring occasionally, until thickened. About 20 to 25 minutes.
- Serve with toppings as desired.
