Sometimes when shrimp season is closed and our stash of Louisiana shrimp from the freezer is depleted, I substitute chicken for shrimp. It&#8217;s a very easy and flavorful dish to put together and will appeal to your entire family. Try it with chicken or shrimp and serve with long grain, jasmine or brown rice.</p>

<li class="ingredient">1 medium green pepper, chopped</li>
<li class="ingredient">1/2 large onion, thinly sliced</li>
<li class="ingredient">1 celery rib, chopped</li>
<li class="ingredient">2 garlic cloves, minced</li>
<li class="ingredient">2 tsp. olive oil, divided</li>
<li class="ingredient">1/4 lb. fresh mushrooms, sliced</li>
<li class="ingredient">1 can (14.5 oz.) diced tomatoes, undrained</li>
<li class="ingredient">1/4 cup low sodium chicken broth</li>
<li class="ingredient">1 Tbsp. minced fresh oregano (or 1 tsp. dried oregano)</li>
<li class="ingredient">1 Tbsp. lemon juice</li>
<li class="ingredient">1/2 Tbsp. minced fresh basil (or 1 tsp. dried basil)</li>
<li class="ingredient">1/4 tsp. crushed red pepper flakes</li>
<li class="ingredient">Cajun Seasoning to Taste (I used about 2 tsp total)</li>
<li class="ingredient">1 lbs. boneless skinless chicken breasts, cubed</li>
<li class="ingredient">Hot cooked rice</li>
<li class="ingredient">Minced Parsley *optional</li>

<li class="instruction">In a saucepan, saute green peppers, onion, celery, and garlic in 1 tsp olive oil until tender.</li>
<li class="instruction">Add mushrooms and cook until liquid has evaporated.</li>
<li class="instruction">Stir in tomatoes, chicken broth, oregano, lemon juice, basil and red pepper flakes.</li>
<li class="instruction">Bring to a boil and reduce heat.</li>
<li class="instruction">Cover and simmer 5-10 minutes.</li>
<li class="instruction">I a separate pot such as a Dutch oven, saute chicken in remaining oil until no longer pink (cook some at a time if needed) Add some Cajun seasoning to chicken.</li>
<li class="instruction">Return chicken to pan and stir in sauce. Heat through, stirring to loosen browned bits from pan.</li>
<li class="instruction">Add additional Cajun seasoning if needed.</li>
<li class="instruction">Serve over rice of your choice.</li>
<li class="instruction">Top with parsley if desired and serve with a bottle of Tabasco Hot Sauce!</li>

<li class="ingredient">1 jar (26 ox) Marinara Sauce {I used a chunky vegetable}</li>
<li class="ingredient">1 can (14 1/2 oz) diced tomatoes, undrained</li>
<li class="ingredient">6 oz Cream Cheese, cubed</li>
<li class="ingredient">3/4 cup Ricotta Cheese</li>
<li class="ingredient">8 oz Shredded Mozzarella Cheese (or Italian Blend)</li>
<li class="ingredient">1/3 cup Grated Parmesan Cheese</li>

<li class="instruction">Preheat oven to 375 degrees Fahrenheit</li>
<li class="instruction">Cook pasta in a large pot as directed per packaging, omitting salt.</li>
<li class="instruction">Drain pasta and set aside</li>
<li class="instruction">Combine marinara sauce, tomatoes and cream cheese to same pot</li>
<li class="instruction">Cook on medium heat until cream cheese is melted and mixture is well blended, stirring frequently</li>
<li class="instruction">Mix pasta into sauce</li>
<li class="instruction">Layer half the pasta mixture in a 13&#215;9 inch baking dish</li>
<li class="instruction">Cover with spoonfuls of the Ricotta cheese and 1 cup mozzarella cheese</li>
<li class="instruction">Layer the other half of the pasta mixture on top</li>
<li class="instruction">Top with remaining mozzarella and Parmesan</li>

For New Orleanians, evacuating is just something that we do. If there is one good thing about a hurricane, it is the ability to track it days before it makes landfall. It gives you the time to get your things together and get out of town. Every time I have ever evacuated the first thing I go for is my pictures. Second, is insurance documents and important papers. After those things, the list starts to get fuzzy. One of the things that I never thought to grab is my recipe binder. Think about the homes lost after a hurricane and how many family recipes were destroyed. There is something very special about a recipe handed down from one generation to the next. In mere moments, those were gone. A friend of mine, who had 10 feet of water in her home, which had 8 foot ceilings, said she didn&#8217;t even realize her recipes were gone until Thanksgiving of 2005 when she went to get her grandmother&#8217;s stuffing recipe and then it hit her that she no longer had it.</p>
<p>The Times-Picayune, New Orleans&#8217; newspaper, began compiling recipes soon after the storm and eventually this cookbook came to be. I am recommending this cookbook because the 250 recipes are delicious and because each recipe tells a story. It is hard to describe how New Orleans cuisine is so intertwined in the city&#8217;s culture. No matter the occasion, there is food and not just any food, really good food. Food with flavor, spice, and stories!</p>

King Cakes hit the shelves on January 6 and will be here until Mardi Gras. When I was a kid that was the only time throughout the year that you could find a <a title="Homemade King Cake" href="http://www.nolamommy.com/2011/02/homemade-king-cake/">king cake</a>. Now a few places change the color of sprinkles on top and sell them all year. Even though they are not as scarce, king cakes are in my top 3 favorite desserts. It&#8217;s right up there with bananas foster and bread pudding.</p>

<p>These cookies are a unique twist on king cakes and take the flavor of a king cake and put them into a cookie! I drizzled the frosting on and sprinkled them with traditional purple, green and gold sprinkles. This morning I had one with my cup of coffee and it was delicious!</p>

<li class="ingredient">1 cup butter, softened</li>
<li class="ingredient">1 3/4 cup sugar, divided</li>
<li class="ingredient">3 egg yolks</li>
<li class="ingredient">1 Tbs honey</li>
<li class="ingredient">1 tsp vanilla extract</li>
<li class="ingredient">1/2 tsp lemon extract</li>
<li class="ingredient">2 Tbs ground cinnamon, divided</li>
<li class="ingredient">2 1/2 cups all-purpose flour</li>
<li class="ingredient">1 tsp baking powder</li>
<li class="ingredient">1/2 tsp salt</li>
<li class="ingredient">1/2 tsp cream of tarter</li>
<li class="ingredient">Icing:</li>
<li class="ingredient">2 cups powdered sugar</li>
<li class="ingredient">1/3 cup warm water (may add more if needed)</li>
<li class="ingredient">1 tsp vanilla extract</li>
<li class="ingredient">1/2 tsp lemon juice</li>
</ul>

<ol>
<li class="instruction">Preheat oven to 350 degrees Fahrenheit.</li>
<li class="instruction">In large bowl, cream butter, 1 1/4 cups sugar, and 1/2 Tbs ground cinnamon until light and fluffy.</li>
<li class="instruction">Beat in the egg yolks, honey, vanilla and lemon extracts.</li>
<li class="instruction">Combine the flour, baking powder, salt, and cream of tarter and gradually add to creamed mixture and mix well.</li>
<li class="instruction">In a shallow bowl or baking dish (I used an 8&#215;8 Pyrex dish), combine remaining sugar and cinnamon. (Depending on how much you like cinnamon you may adjust your cinnamon and sugar mixture to taste.)</li>
<li class="instruction">Shape a heaping tablespoon of dough into a 6&#8243; log and roll in the cinnamon and sugar mixture.</li>
<li class="instruction">Loosely coil into a spiral shape and place onto greased baking sheet about 1&#8243; apart.</li>
<li class="instruction">Sprinkle with remaining cinnamon and sugar.</li>
<li class="instruction">Bake at 350 degrees for 8-10 minutes or until set. Remove to wire racks and cool completely.</li>
<li class="instruction">For the icing:</li>
<li class="instruction">Slowly add the warm water, vanilla extract, and lemon juice to the powdered sugar until you reach your desired consistency.</li>
<li class="instruction">Place the icing into a piping bag (or a sandwich bag) and cut off just the tip to pipe the icing onto the cookies.</li>
<li class="instruction">Sprinkle with purple, green, and gold sprinkles! (decorate as desired)</li>

<p>A while back I shared a <a title="LSU Cupcakes" href="http://www.nolamommy.com/2011/08/lsu-cupcakes/">tie-dyed theme for LSU cupcakes</a>. It involved dying the batter purple and gold and swirling to two together prior to baking. Here is another idea for really cute LSU themed cupcakes! I used a Wilton grass tip #233 to pipe the top of the cupcake with green icing. I used a standard <a title="New Orleans Wedding Cake Cupcakes" href="http://www.nolamommy.com/2011/07/new-orleans-wedding-cake-cupcakes/">butter cream recipe</a> and added Wilton&#8217;s green gel food coloring. Before dying it green, I put a little white icing on the side to pipe the yard lines on the cupcakes. For the LSU on top I took white chocolate chips and melted them for 15 second intervals until they melted and placed the melted chocolate in a piping bag. Then I barely cut off a piece of the tip and piped the LSU out onto wax paper. Sprinkled them with purple and gold sprinkles before they dried. I free handed the LSU but if you wanted to you could write or print LSU on a sheet of paper and lay your wax paper on top. That way all you had to do was trace. Place them in fridge to cool and the pop right off the wax paper. For my game day cupcakes I am going to pipe some white chocolate LSU&#8217;s and some milk chocolate footballs with white chocolate laces. I&#8217;ll share some pics after the big game.</p>

<li class="instruction">Heat olive oil in a large pot over medium high heat. Add the onions, bell peppers, and garlic.</li>
<li class="instruction">Cook while stirring occasionally, until soft, about 6 to 8 minutes.</li>
<li class="instruction">Add the beef and cook, breaking up with a spoon, until no longer pink, about 5 to 7 minutes.</li>
<li class="instruction">Add the tomato paste, chili powder, cumin, and additional spices if used and cook, stirring for about 2 minutes.</li>
<li class="instruction">Add the beer, beans, the tomatoes and their juices, 1 tsp salt and 1/4 tsp pepper.</li>

<li class="ingredient">1 tsp &#8211; 2tsp Shortening* optional (only if needed to thin chocolate coating)</li>

<li class="instruction">Place entire pack of Oreos into food processor and grind until fine</li>
<li class="instruction">Mix in softened cream cheese until it becomes a dough consistency</li>

<li class="instruction">Place in refrigerator while melting chocolate</li>
<li class="instruction">Melt chocolate any way desired (I use the tray provided and melt in the microwave)</li>
<li class="instruction">Dip pre-formed balls into melted chocolate and place on the wax paper</li>
<li class="instruction">If you choose to use sprinkles, place them on prior to drying</li>
<li class="instruction">If needed, you can add 1 to 2 teaspoons of shortening to chocolate to make thinner</li>

<li class="ingredient">3 cups mashed sweet potatoes</li>
<li class="ingredient">1 cup sugar</li>
<li class="ingredient">1/2 teaspoon salt</li>
<li class="ingredient">1 teaspoon vanilla extract</li>
<li class="ingredient">2 eggs, well beaten</li>
<li class="ingredient">1/2 cup butter, melted</li>

<li class="instruction">Preheat oven to 350 degrees Fahrenheit.</li>
<li class="instruction">Coat a medium sized casserole dish with non-stick cooking spray</li>
<li class="instruction">Combine sweet potatoes, sugar, salt, vanilla, eggs, and butter in a large mixing bowl in the order listed above.</li>
<li class="instruction">Beat thoroughly with a hand mixer to increase the fluffiness of the sweet potato mixture.</li>
<li class="instruction">Pour mixture into the baking dish.</li>
<li class="instruction">Bake for 30 minutes.</li>
<li class="instruction">Sprinkle the surface of the sweet potato mixture evenly with the crust mixture and return to oven for 10 minutes. Allow to set at least 30 minutes before serving.</li>
<li class="instruction">The brown sugar and pecan crust should be slightly brown and crunchy.</li>

Thankfully, it came out great and although my cake decorating skills need improving, the taste made up for it. The contrast of sweet and salty with the crunch of the pecans make this a desert that I will make again. Oh, I forgot to mention that I coated the sides and top with crushed pecans and on top I added mini-chocolate chips and drizzled it with caramel. Now that I am typing this it wants me want to bake one just for me!</p>

<li class="ingredient">1 package devil&#8217;s food cake mix (I prefer Duncan Hines Premium cake mix)</li>
<li class="ingredient">1 (5.9 oz) package instant chocolate pudding mix</li>
<li class="ingredient">1 1/4 cup water</li>
<li class="ingredient">1 tsp pure vanilla extract</li>
<li class="ingredient">1/3 cup vegetable oil</li>
<li class="ingredient">1/2 cup sour cream</li>
<li class="ingredient">3 whole eggs</li>
<li class="ingredient">1 egg white</li>
</ul>

<li class="instruction">Preheat oven to 350 degrees Fahrenheit for metal and glass pans or 325 degrees Fahrenheit for dark or coated pans.</li>
<li class="instruction">Coat bottom of pans with non-stick cooking spray or shortening coated with flour. (this is where I say a little prayer that everything comes out all right) or use baking cups for cupcakes</li>
<li class="instruction">Stir powdered cake mix to prevent lumps in your batter.</li>
<li class="instruction">Blend cake mix, water, oil, sour cream, vanilla extract, and eggs at a low speed until moistened (Note: Beat your eggs together prior to adding them to your batter)</li>
<li class="instruction">Pour batter evenly into your baking pans. (If you are making cupcakes, these do tend to rise so adjust your fill amount accordingly. I use an ice cream scoop and fill mine a little less than 1/2)</li>
<li class="instruction">Bake: 2 &#8211; 8&#8243; pans = 33-36 minutes, 2 &#8211; 9&#8242; pans = 28-31minutes, 13&#8242;x9&#8242; = 32-35 minutes, Bundt = 38-43 minutes, 24 cupcakes = 18-21 minutes</li>
<li class="instruction">Check your baking times to your own oven. I know that my oven is usually 1-3 minutes less than one is listed above. For 24 cupcakes I bake them 16-17 minutes. Chocolate does seem to take a minute or two longer than other cakes.</li>
<li class="instruction">Decorate with crushed pecans, chocolate chips, and drizzle with caramel.</li>

<p>Caramel Butter-cream:<br />
2 sticks of butter (softened to room temperature)<br />
2 tsp pure vanilla extract<br />
1/4 teaspoon salt<br />
1 lb of powdered sugar<br />
1/2 cup caramel sauce (I use Smuckers or Hershey&#8217;s ice cream topping)</p>
<p>Mix the butter, extract and salt until creamy, add powdered sugar until you get a thick consistency and then add the following. Add additional powdered sugar or caramel sauce to get the smooth consistency that you desire.</p>

We discussed Hurricane Katrina and how it has changed his outlook on many things. I have to agree, there is something about watching your hometown destruct in front of your eyes and living through such uncertainty that makes you look at things differently. He spoke about finding ways in which he could contribute to the rebuilding of New Orleans. Growing up, every Sunday it was mandatory to go to Grandma&#8217;s for dinner and everyone sat at the table. We talked, laughed, and did it all again the following week. I hope to use recipes from Chef Besh&#8217;s latest cookbook to rekindle that tradition.</p>
