Sorry it’s late. My WiFi is teaching me lessons in patience and is reminiscent of the days of dial-up.

This morning I had to cross the longest bridge over water in North America.
It’s 24 miles long and had bumper to bumper traffic! Ugh!

But when I looked over towards the city,
there was a beautiful sunrise with rays of light over the city.
I grabbed my cell phone, snapped these photos, and realized there was no need to stress.
I said a quick prayer, still made it on time and have some promising projects in the pipeline.
The point of this story is that today, I was thankful for this peaceful moment
that was made possible thanks to traffic.

Pasta is such a versatile ingredient and can be made into a dish that fits your family and now through the Luxury Pasta Moments Photo Contest, Luxury Pasta wants to know what home means to you.

and the completed caption,

Ever since my son attended cooking school for kids he loves to help me in the kitchen.
He’s a pretty good mini-chef and last week we made Baked Ziti for the first time.

Since he is becoming more selective (that is a nice way of saying PICKY!)  about what he eats,
I have tried including him more in the cooking process
because he’s more open to eating what he cooks!

Here is our recipe for Baked Ziti:

Baked Ziti
Print
Recipe type: Main
Prep time: 20 mins
Cook time: 40 mins
Total time: 1 hour
Serves: 8
A quick and easy pasta dish that the entire family will enjoy!
Ingredients
  • 4 cups Luxury Penne Rigate Pasta
  • 1 jar (26 ox) Marinara Sauce {I used a chunky vegetable}
  • 1 can (14 1/2 oz) diced tomatoes, undrained
  • 6 oz Cream Cheese, cubed
  • 3/4 cup Ricotta Cheese
  • 8 oz Shredded Mozzarella Cheese (or Italian Blend)
  • 1/3 cup Grated Parmesan Cheese
Instructions
  1. Preheat oven to 375 degrees Fahrenheit
  2. Cook pasta in a large pot as directed per packaging, omitting salt.
  3. Drain pasta and set aside
  4. Combine marinara sauce, tomatoes and cream cheese to same pot
  5. Cook on medium heat until cream cheese is melted and mixture is well blended, stirring frequently
  6. Mix pasta into sauce
  7. Layer half the pasta mixture in a 13×9 inch baking dish
  8. Cover with spoonfuls of the Ricotta cheese and 1 cup mozzarella cheese
  9. Layer the other half of the pasta mixture on top
  10. Top with remaining mozzarella and Parmesan
  11. Bake 20 minutes, or until heated through
Notes

This pasta dish can be assembled ahead of time. Refrigerate up to 8 hours, When ready to serve, back, uncovered for 30 to 35 minutes, or until heated through.

Well, Monday Night’s National Championship game sure didn’t go as I had hoped.

The funny thing is that since my oldest son was born:

LSU has won 2 National Championships (The time before being in 1958)
The Saints have won a Super Bowl (The first time ever!) &
It’s snowed 3 times in New Orleans (Before that I had only seen snow once!)!

I am sharing that because in his 9 year old mind, LSU always wins, the Saints have always been good (he wasn’t here for the days when you couldn’t give tickets away), and it’s going to snow every year. He’s learning that winning doesn’t come easy and the way you act when you lose is just as important as how you act when you win!

Whew! This Christmas season has flown by. I am so thankful that we had the chance to see both sides of our families and visit with aunts & uncles that live out of town.  Then on Christmas Day, we stayed home and had everyone come to us for brunch! It was my littlest son’s first Christmas and even at almost 8 months he was able to get right in the middle of the action! I hope everyone had a wonderful Christmas and has a wonderful start to 2012!


Most of the morning the little one wanted everything the big one got until he opened his new table and he loved that!
Big brother showed him how everything on it worked.

See the camera lens on the couch behind me and little guy.
(It’s been missing since Christmas morning!)
This pic proves I put it where I thought I did!

I  laugh every time I see a pic of him in his wolf hat!
It is so precious and will be perfect for Mardi Gras!

We did a pancake bar so that everyone could add in different things to their pancakes.
I also baked an egg casserole, fried bacon, and made a Raspberry Danish from scratch!

I tell you all of this because…..

This is what we had for dinner!
Yes, we took a page out of the infamous Christmas Story movie and ate Chinese takeout!
My son can’t wait to tell his teacher when he gets back to school! Lol
