Celebrate your child&#8217;s next birthday party at the Louisiana SPCA Animal Care and Rescue Center. Kids can have fun while learning about animals and participating in hand&#8217;s on activities. Most importantly, your birthday party booking fee will help thousands of rescue animals in the care of the <a href="http://la-spca.org/Page.aspx?pid=781">Louisiana SPCA</a>. In addition to birthday parties, your child can enjoy a night at the movies at Critter Cinema and cozy up to kittens and puppies while enjoying G-rated critter movies, snacking on pizza and popcorn all while interacting with animal-loving kids! I know that my son would love either event. He&#8217;s an animal lover and has proved himself to be very responsible when caring for our seven year old, dachshund, <a href="http://www.nolamommy.com/2011/08/wordless-wednesday-81011/">Bailey</a>. He feeds her, makes sure she has water, lets her out, and spends time with her.  He&#8217;s learned so much from being a dog owner and I know he would love to have dogs share in his birthday or show them a little needed affection while watching movies.</p>

Sometimes when shrimp season is closed and our stash of Louisiana shrimp from the freezer is depleted, I substitute chicken for shrimp. It&#8217;s a very easy and flavorful dish to put together and will appeal to your entire family. Try it with chicken or shrimp and serve with long grain, jasmine or brown rice.</p>

<div class="ERSummary"><span class="summary">Sure to be a family favorite this Louisiana Chicken Creole recipe is simple to make but brings big flavor. It&#8217;s a twist on the more traditional shrimp creole dish commonly seen on menus around New Orleans, LA.</span></div>

<li class="ingredient">1 medium green pepper, chopped</li>
<li class="ingredient">1/2 large onion, thinly sliced</li>
<li class="ingredient">1 celery rib, chopped</li>
<li class="ingredient">2 garlic cloves, minced</li>
<li class="ingredient">2 tsp. olive oil, divided</li>
<li class="ingredient">1/4 lb. fresh mushrooms, sliced</li>
<li class="ingredient">1 can (14.5 oz.) diced tomatoes, undrained</li>
<li class="ingredient">1/4 cup low sodium chicken broth</li>
<li class="ingredient">1 Tbsp. minced fresh oregano (or 1 tsp. dried oregano)</li>
<li class="ingredient">1 Tbsp. lemon juice</li>
<li class="ingredient">1/2 Tbsp. minced fresh basil (or 1 tsp. dried basil)</li>
<li class="ingredient">1/4 tsp. crushed red pepper flakes</li>
<li class="ingredient">Cajun Seasoning to Taste (I used about 2 tsp total)</li>
<li class="ingredient">1 lbs. boneless skinless chicken breasts, cubed</li>
<li class="ingredient">Hot cooked rice</li>
<li class="ingredient">Minced Parsley *optional</li>

<li class="instruction">In a saucepan, saute green peppers, onion, celery, and garlic in 1 tsp olive oil until tender.</li>
<li class="instruction">Add mushrooms and cook until liquid has evaporated.</li>
<li class="instruction">Stir in tomatoes, chicken broth, oregano, lemon juice, basil and red pepper flakes.</li>
<li class="instruction">Bring to a boil and reduce heat.</li>
<li class="instruction">Cover and simmer 5-10 minutes.</li>
<li class="instruction">I a separate pot such as a Dutch oven, saute chicken in remaining oil until no longer pink (cook some at a time if needed) Add some Cajun seasoning to chicken.</li>
<li class="instruction">Return chicken to pan and stir in sauce. Heat through, stirring to loosen browned bits from pan.</li>
<li class="instruction">Add additional Cajun seasoning if needed.</li>
<li class="instruction">Serve over rice of your choice.</li>
<li class="instruction">Top with parsley if desired and serve with a bottle of Tabasco Hot Sauce!</li>

Through the sales of their <a href="http://www.fleurdelightcandles.com/68-see-the-light-feed-the-hungry" target="_blank">See the Light, Feed the Hungry Candles</a>, in cooperation with the Second Harvest Food Bank of Greater New Orleans and Acadania, they have been able to feed over 19,000 people since August 2011!</p>
<p>I first took notice of the See the Light, Feed the Hungry Candles while working on a blogging project for <a href="http://www.nolamommy.com/2011/09/september-is-hunger-action-month/">Second Harvest&#8217;s Hunger Action Month</a> last September. I can honestly say that prior to that project, I was not aware how widespread and devastating the problem of hunger is across South Louisiana. The founder of Fleur de Light Candles, <a href="http://www.fleurdelightcandles.com/content/2-about-fleur-de-light-candles">Sondra Berger</a>, recalled her parent&#8217;s depression era stories of battling food shortages and knew that she wanted to make a difference. It was a quote by Mother Theresa that says, &#8220;<em>If you can&#8217;t feed one hundred people, feed just one</em>,&#8221; that inspired her.</p>

For New Orleanians, evacuating is just something that we do. If there is one good thing about a hurricane, it is the ability to track it days before it makes landfall. It gives you the time to get your things together and get out of town. Every time I have ever evacuated the first thing I go for is my pictures. Second, is insurance documents and important papers. After those things, the list starts to get fuzzy. One of the things that I never thought to grab is my recipe binder. Think about the homes lost after a hurricane and how many family recipes were destroyed. There is something very special about a recipe handed down from one generation to the next. In mere moments, those were gone. A friend of mine, who had 10 feet of water in her home, which had 8 foot ceilings, said she didn&#8217;t even realize her recipes were gone until Thanksgiving of 2005 when she went to get her grandmother&#8217;s stuffing recipe and then it hit her that she no longer had it.</p>
<p>The Times-Picayune, New Orleans&#8217; newspaper, began compiling recipes soon after the storm and eventually this cookbook came to be. I am recommending this cookbook because the 250 recipes are delicious and because each recipe tells a story. It is hard to describe how New Orleans cuisine is so intertwined in the city&#8217;s culture. No matter the occasion, there is food and not just any food, really good food. Food with flavor, spice, and stories!</p>

<p style="text-align: center;">Many of you are familiar with Courtney and Tripp Roth from Ponchatoula, Louisiana.</p>
<p style="text-align: center;">Tripp lost his fight with EB (Epidermolysis Bullosa) on January 14, 2012 at the age of 2 years and 8 months.  Courtney blogged about her son&#8217;s battle with this horrific disease that causes blisters and sores of the skin with any pressure or friction at &#8220;<a href="http://randycourtneytripproth.blogspot.com/">EBing a Mommy</a>.&#8221;</p>
<p style="text-align: center;">While facing the unthinkable, she displayed strength, grace, and unwavering faith.</p>
<p style="text-align: center;">Please pray for the Roth family today as they celebrate the life of Tripp and the impact he had on so many people. Pray for God&#8217;s comfort and peace for Courtney and her family.</p>

Our night began at <a title="Elevate your Tailgate with Zatarain’s &amp; Chef John Besh" href="http://www.nolamommy.com/2011/10/elevate-your-tailgate-with-zatarain%e2%80%99s-chef-john-besh/">Chef John Besh</a>&#8216;s and Chef Brian Landry&#8217;s newest restaurant,<a title="Bourne Restaurant" href="http://www.borgnerestaurant.com/"> Bourgne</a>, located in the newlyrenovated Hyatt Regency by the Superdome! It&#8217;s named for Lake Bourgne, a popular fishing spot for many in South Louisiana. We were served crabmeat croquetas, fried oysters amandine, seafood stuffed artichokes, marinated crab fingers, and duck poppers with jalapeno and bacon. It displayed Louisiana seafood at its finest! Bourgne is sure to be a hit with locals, visitors, and because it is so close to the Dome, it will make a perfect stop for a pre-game bite or a celebration drink and meal after the game! Chef Besh spoke about getting the word out that Louisiana seafood is safe and has endured more quality control testing than any seafood in the world. It was an honor to be able to talk with Chef Besh <a title="Elevate your Tailgate with Zatarain’s &amp; Chef John Besh" href="http://www.nolamommy.com/2011/10/elevate-your-tailgate-with-zatarain%e2%80%99s-chef-john-besh/">again</a> and his passion for food and using fresh, local ingredients makes him a great ambassador for Gulf Coast Seafood!</p>

It was there that Chris Blankenship, the Alabama Director of Marine Resources, addressed the crowd and made a point to thank all of the Louisianians that spend their time and money on the Alabama Gulf Coast! Second, Jay Dardenne, Louisiana Lt. Govenor, addressed the crowd and even joked about Alabama fans being &#8220;Tiger Bait!&#8221; In true Louisiana style he told a great Boudreaux and Thibodeaux joke and spoke about the people of Louisiana being passionate about food, family, fun &amp; football! I loved talking to members of the media who cover sports all over the country and hearing them say how unique and dedicated Saints and LSU fans are. I even got to teach someone how to correctly do the &#8220;Who Dat Say &#8216;dey gonna beat &#8216;dem Saints?&#8221; chant. Who Dat!</p>

<p style="text-align: left;">Lastly, when exiting the buses in front of Jax Brewery, we were greeted by a traditional brass band and second lined to Muriel&#8217;s on the corner of Jackson Square. The food was wonderful and included seafood beignets, fried oysters, and crab cakes. Muriel&#8217;s was the perfect ending to a great night. We enjoyed the balcony overlooking Jackson Square and the historic atmosphere inside Muriel&#8217;s.</p>

<p>A while back I shared a <a title="LSU Cupcakes" href="http://www.nolamommy.com/2011/08/lsu-cupcakes/">tie-dyed theme for LSU cupcakes</a>. It involved dying the batter purple and gold and swirling to two together prior to baking. Here is another idea for really cute LSU themed cupcakes! I used a Wilton grass tip #233 to pipe the top of the cupcake with green icing. I used a standard <a title="New Orleans Wedding Cake Cupcakes" href="http://www.nolamommy.com/2011/07/new-orleans-wedding-cake-cupcakes/">butter cream recipe</a> and added Wilton&#8217;s green gel food coloring. Before dying it green, I put a little white icing on the side to pipe the yard lines on the cupcakes. For the LSU on top I took white chocolate chips and melted them for 15 second intervals until they melted and placed the melted chocolate in a piping bag. Then I barely cut off a piece of the tip and piped the LSU out onto wax paper. Sprinkled them with purple and gold sprinkles before they dried. I free handed the LSU but if you wanted to you could write or print LSU on a sheet of paper and lay your wax paper on top. That way all you had to do was trace. Place them in fridge to cool and the pop right off the wax paper. For my game day cupcakes I am going to pipe some white chocolate LSU&#8217;s and some milk chocolate footballs with white chocolate laces. I&#8217;ll share some pics after the big game.</p>

The beloved New Orleans Saints will be taking on the Detroit Lions in the Mercedes Benz Superdome on Saturday night in their first playoff game on the road to another Super Bowl win. Then on Monday night the LSU Tigers will be taking on the Alabama Crimson Tide in the BCS National Championship Game. That is a game that promises a free cardiac stress test for all fans! I have confidence that the Tigers will be victorious but it promises to be a true battle of wills!</p>
<p>If you need a tasty meal while enjoying these games or while supporting your favorite team this chili recipe is delicious and screams tailgating food. It&#8217;s hearty with some veggies mixed in and add a little flair on top such as sour cream, scallions, avocado, cheddar cheese, red onion, or toasted pumpkin seeds. Serve it with hot dogs and you&#8217;ve got yourself a football watching meal!</p>

<li class="ingredient">1 onion, chopped</li>
<li class="ingredient">1 bell pepper, cut into 1/2&#8242; cubes</li>
<li class="ingredient">2 cloves garlic, chopped</li>
<li class="ingredient">1 lb ground meat</li>
<li class="ingredient">3 oz tomato paste</li>
<li class="ingredient">2 Tbs chili powder</li>
<li class="ingredient">2 tsp cumin</li>
<li class="ingredient">1 tsp salt</li>
<li class="ingredient">1/4 tsp pepper</li>
<li class="ingredient">1 &#8211; 2 tsp Cajun Seasoning *optional</li>
<li class="ingredient">1 bottle lager (12oz beer)</li>
<li class="ingredient">1 can of kidney beans (19oz)</li>
<li class="ingredient">1 can of diced tomatos (12oz)</li>

<ol>
<li class="instruction">Heat olive oil in a large pot over medium high heat. Add the onions, bell peppers, and garlic.</li>
<li class="instruction">Cook while stirring occasionally, until soft, about 6 to 8 minutes.</li>
<li class="instruction">Add the beef and cook, breaking up with a spoon, until no longer pink, about 5 to 7 minutes.</li>
<li class="instruction">Add the tomato paste, chili powder, cumin, and additional spices if used and cook, stirring for about 2 minutes.</li>
<li class="instruction">Add the beer, beans, the tomatoes and their juices, 1 tsp salt and 1/4 tsp pepper.</li>
<li class="instruction">Simmer over medium heat, stirring occasionally, until thickened. About 20 to 25 minutes.</li>
<li class="instruction">Serve with toppings as desired.</li>

It was great seeing the team win but even more special than beating our rival on Monday Night Football was watching Saint&#8217;s quarterback <a title="Wordless Wednesday with #9 Drew Brees {Linky}" href="http://www.nolamommy.com/2011/11/wordless-wednesday-with-9-drew-brees-linky/">Drew Brees</a> surpass Dan Marino&#8217;s record to become the NFL&#8217;s All-Time Single Season Passing Leader with over 5,000 yards thrown. What Dan Marino accomplished in 16 games, Drew Brees did in only 15! That means, if he plays in game 16 vs. the Panthers, everything he throws for will be lagniappe in regards to the record! Congrats to the NFC South Division Champs and to #9 Drew Brees for earning a well-deserved place in history!</p>
<p style="text-align: center;">Because I was extremely anxious as the yards needed for Brees to reach the record were being counted down, 80, 30, 18, 7&#8230;.. RECORD! I started searching for cute Saints items online and came up with a few of my faves!</p>
